Recipe for Basil Pesto

Basil Pesto

Makes about 1 cup

2 cups fresh basil leaves

3 cloves garlic

2 tablespoons pine nuts or walnuts

½ cup olive oil

Salt, to taste

½ cup freshly grated parmesan cheese

  1. Place basil, garlic, nuts, oil and salt in food processor or large mortar and pestle.
  2. Add parmesan, or for more texture save and stir in after pureeing.
  3. Puree until smooth.
  4. Stir in Parmesan, if you haven’t already done so.

Use to flavor soups, sandwiches. Or add a little water, and stir into hot cooked pasta.

Works with all kinds of basil – Cinnamon Basil – spread on toast for a morning treat). Lemon Basil – spread on water crackers with afternoon English tea. Enjoy!
