Recipe for Basil Pesto
Basil Pesto
Makes about 1 cup
2 cups fresh basil leaves
3 cloves garlic
2 tablespoons pine nuts or walnuts
½ cup olive oil
Salt, to taste
½ cup freshly grated parmesan cheese
- Place basil, garlic, nuts, oil and salt in food processor or large mortar and pestle.
- Add parmesan, or for more texture save and stir in after pureeing.
- Puree until smooth.
- Stir in Parmesan, if you haven’t already done so.
Use to flavor soups, sandwiches. Or add a little water, and stir into hot cooked pasta.
Works with all kinds of basil – Cinnamon Basil – spread on toast for a morning treat). Lemon Basil – spread on water crackers with afternoon English tea. Enjoy!
